The Accademia del Risotto al Pesce Persico (Perch Risotto Academy) is an association that was born from the desire to start a process of popularizing the culinary tradition of the Lake Como area, little known outside the borders of Lake Como, by telling the culinary heritage of the area starting from its most emblematic recipe: perch risotto.
