The visit to Carozzi Formaggi SRL is part of the project “Saper Fare: Businesses Tell Their Stories,” an initiative born from the collaboration between the Lecco–Como Chamber of Commerce and the FAI Delegations of Como, Lecco, and Alta Brianza.

The aim is to showcase the area’s production excellence, presenting workplaces as meeting points between history, tradition, development, and innovation, marked by professionalism and creativity.

Visitors will be given a passport in which the stages reached along this journey will be stamped.

For generations, the Carozzi family has devoted itself with passion to the creation of artisanal cheeses deeply rooted in the traditions of Valsassina. Carozzi cheeses are crafted by the skilled hands of master cheesemaker Marco Carozzi, who faithfully follows ancient techniques handed down from generation to generation. Each cheese is produced with great care and attention, preserving the distinctive aromas and flavors that characterize Valsassina. Among the specialties are Taleggio DOP and the refined Gorgonzola DOP, true symbols of quality and tradition.

The experience includes a guided tour of the production departments, with a particular focus on the different aging stages of the cheeses, especially Taleggio DOP and Gorgonzola DOP. During the visit, Carozzi staff will explain the various aging processes, accompany visitors through the different aging rooms, and share the history of the company and the cheesemaking tradition of Valsassina.

Please note

Comfortable, warm clothing is recommended (access to the aging rooms). The visit is not accessible to strollers, prams, or wheelchairs.
